"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway
5 lbs. – red potatoes 3 bunches – green onions 1 lb. – Farmland bacon (it’s the best, but you can use any brand of smoked bacon) 3 T. – white vinegar
Peel & cook potatoes. Cut up onions using some of the green tops. Fry bacon and save the grease. Cut up potatoes into small pieces. Break up bacon and put in with the potatoes and onions. Heat vinegar and grease for about 2 to 3 minutes. Pour over potatoes, stir, and add salt and pepper to taste.
