2 T. butter or marg.
1 onion, chopped
1 celery stalk, chopped
2 medium potatoes, chopped
5 1/2 c. chopped carrots
2 tsp. minced fresh ginger
1 1/2 qts. chicken broth
7 T. whipping cream
good pinch of nutmeg
salt and pepper to taste

Directions:
Directions:
Melt butter. Add onion and celery. Cook about 5 minutes until soft. Stir in the potato, carrots, ginger and broth. Bring to a boil. Lower heat to low, cover and simmer for about 20 minutes. Pour the soup into a food processor or blender and process until smooth. Return to pan. Stir in the cream, nutmeg, salt and pepper. Reheat slowly and serve.
