5 tbsp butter
3/4 c finely chopped onion
1 1/2 c diced cooked ham
6 eggs
3 tbsp chopped chives
1 c grated cheddar cheese
6 tbsp half and half
pinch of pepper
5 medium potatoes-grated or 12 oz frozen hash browns
2 tbsp butter

Directions:
Directions:
Peel and grate potatoes; let soak in cold water while preparing rest of ingredients. In fry pan, melt 5 tbsp butter and saute onion till just tender. Add ham and cook 5 minutes longer, remove from heat. Beat together eggs, half and half, cheese, chives, and pepper. Drain and squeeze water from potatoes. Add potatoes, ham and onion. Stir well. Heat 2 tbsp butter in a 9x13 baking pan. Pour in the egg mixture. Bake at 375º for 30-40 minutes or until top is browned.
