6 Loin Chops (1/2 " thick)
2 tbsp. cooking oil
salt & pepper to taste
3/4 c. uncooked long grain rice
1 1/2 c. water
1 can (8 oz.) tomato sauce
1/2 envelope taco seasoning mix (2 tbsp.)
1 med. green pepper - chopped

Directions:
Directions:
In a large skillet, brown pork chops in oil; sprinkle with salt and pepper. Meanwhile, in a greased 13" x 9" x 2" baking dish, combine rice, water, tomato sauce & Taco seasoning; mix well. Arrange chops over rice; top with green pepper. Cover and bake at 350º for 1 1/2 hours. Uncover and sprinkle with cheese; return to oven until the cheese is melted.
