2 tbsp butter
1/2 c chopped onion
1/4 c chopped green pepper
1/4 c chopped red pepper
2 c corn (canned or leftover)
2 tbsp flour
3/4 c milk
1 egg, beaten
1/2 tsp salt
Dash of pepper
1/3 c dry cracker crumbs

Directions:
Directions:
In a saucepan, melt butter. Add onion and peppers and saute 2 minutes. Stir in flour, salt and black pepper; remove from heat. Gradually add milk. Heat just to boiling, stirring constantly. Add corn, cracker crumbs and egg. Pour into an ungreased 2 qt. casserole. Bake uncovered at 350º for 30 minutes.
