1 - 10 oz frozen chopped spinach
1 c half and half
1 tbsp minced onion
1/2 c shredded cheddar cheese
3 eggs
Salt and pepper

Directions:
Directions:
Cook and drain chopped spinach. Butter the inside of a 2 qt. baking dish. In a mixing bowl beat eggs until fluffy. Stir in cooked spinach, half and half and cheese. Lightly salt and pepper the mixture. Pour into baking dish. Bake at 350º until puffed and set, about 25 minutes. (Knife inserted into center should come out clean).
