1 lb hamburger
1/4 c chopped onion
3/4 c water
1 envelope taco seasoning
1/2 tsp salt
1 - 4 oz can mushrooms, drained
3 c uncooked fine egg noodles
2 1/2 - 3 c tomato juice
1 c sour cream
1 tbsp minced fresh parsley

Directions:
Directions:
Cook beef & onion until meat is no longer pink; drain. Stir in water, taco seasoning, & salt. Reduce heat and simmer for 2-3 minutes. Add mushrooms. Sprinkle noodles over the top. Pour tomato juice over the noodles and stir gently. Cover and simmer for 20-25 minutes or until noodles are tender. Remove from heat. Combine the sour cream & parsley; spread over the top. Cover & let stand for 5 minutes.
