* 5 ears fresh sweet white corn
{frozen white corn works here too}
* 6 pepper bacon strips/chopped
* 1 medium sweet onion/diced
* 2 shallots/diced
* 1 box low sodium chicken broth
* 1 1/2 tsp. fresh thyme~OR~ 1/2 tsp dried thyme
* 2 TBSP. corn starch
* 2 TBSP. water
* 2 cups whipping cream
{half & half can be substituted}

Directions:

*Cut corn from the cobs,save the kernels & the cobs.
* Cook the bacon in the bottom of that favorite soup pot {medium heat} until it's done.
* Remove it & pat on papertowel.
*Add the onion & shallot to the bacon fat & cook 3 to 5 minutes until tender.
*Take the cobs & scrape off any excess kernels & the "corn milk"~this is the good stuff~the back of your chef knife works great for this.
* Add the broth & the thyme,stir well & cover with a vented lid for about 15 minutes.
*Dissolve the cornstarch in the 2 TBSP. of water & add.
* Add the corn kernals & cream. Bring to a boil ,stirring constantly. Reduce the heat & simmer 'til the corn is tender.
* Season with salt & pepper/garnish with the bacon bits.
