1-2 whole chickens -cut into pieces
Flour
Ice Water
Crisco-Solid
Cast Iron Skillet
Salt
Pepper

Directions:
Directions:
1) Cut up chicken, put in large bowl, cover pieces with salt water, add ice cubes-enough to cover bowl. Let stand 1 hour (no shortcuts!)
2) Drain put back in bowl and cover with flour, mix well, let stand 1 hour. Chicken should be wet so that it feels like a paste.
3) Heat large heavy skillet with crisco solid (and heat until melted)- DO NOT USE LIQUID OIL. Add chicken and fry until cooked.
*Note: I put a little paprika on just before taking out of skillet for color.
4) Drain well on paper towel.

This is the only way my Mom fried chicken. It has become my family's favorite. Because it takes a while to do my family knows its made with lots of love, and good memories.
