Five apples (all Granny Smith or 3 Granny Smith and 2 Fiji - this gives the recipe a more festive look)
1 1/2 tablespoons lemon juice (may need more as you prepare the apples)
Two dashes of salt
4 heaping tablespoons of real mayonnaise
1/2 cup sugar (to taste- may need more later if not sweet enough)
1/2 tablespoon of white vanilla extract (may need more like 3/4 tablespoon but this depends on size of the apples)
Raisins - add enough to have a good blend
Pecan pieces - add enough to have a good blend

Place lemon juice and salt in a mixing bowl.

Dice apples and stir into lemon juice/salt as you cut up each apple. This will help keep the apples from darkening. As you add each apple (dice one lemon juice as needed in order to wet each piece completely - you can add up to another tablespoon full.

Stir in mayonnaise, sugar, white vanilla, raisins and pecan pieces. If mixture does not coat all apple pieces, add more mayonnaise. Need to give all apple pieces a good coating. Let sit for 10 to 15 minutes or until the sugar has a change to fully melt. Stir again and taste. You can add a dash of nutmeg or cinnamon if you want. Stir after each addition.

Refrigerate overnight. This will keep for several days in the refrigerator, but the raisins will plump up and will darken the mixture, this it doesn't have good presentation in the bowl, just re-stir.
