Ingredients: 1 cup sugar 1 cup butter (2 sticks - at room temperature) 1 teaspoon baking soda 1 teaspoon cream of tarter 1/2 cup chopped pecans 1 1/2 cups flour 1 teaspoon vanilla 2 1/2 cups cornflakes (Only use Kellog's)

Directions:Preheat oven to 350 degrees
With mixer, cream together butter and sugar.
Mix baking soda, cream of tartar, chopped pecans and flour together.
Combine flour mixture with sugar mixture and add vanilla. Gently add the cornflakes.
Note: Once all ingredients are combined, it is easier and better to use 'clean hands' to mix.
Drop from spoon or roll in a ball and press with a fork. Place on an ungreased cookie sheet. Bake for 10 to 12 minutes. Be sure to watch as you DO NOT want to overcook these cookies.
These cookies are so delicious, and you will not be able to each just one! Great with a glass of milk or a cup of coffee or tea. Enjoy! |

Notes: A dear friend of our family was Frances Sutton, who we affectionately called “Granny Frances,” made these heavenly cookies. Every Christmas we would go to her house to visit, and she would have a huge platter of homemade cookies, fudge and candy on the Lazy Susan on her kitchen table. It was always a treat sampling her homemade goodies. Even though she is no longer with us, my sister Anne and I continue to honor her by making her wonderful Cornflake Cookies every Christmas. It has become one of our family’s favorite cookies.
