Drain pineapple and save juice. Mix juice, cornstarch and lemon juice. Put pineapple and sugar in saucepan. When hot, add cornstarch mixture and cook until it bubbles and is clear.
Add a little of hot mixture to egg yolks, and then slowly add eggs to hot mixture and cook 1 minute.

Beat 2 egg whites and add 1/8 teaspoon
cream of tartar. When it peaks, slowly add 4 tablespoons sugar and beat until stiff.
Pour pineapple into shell. Finish meringue and pile on top of hot pineapple and spread over pie to edge. Brown pie for a few minutes in 400-degree oven.

Add 1 extra egg white for a higher meringue. Can Sub whipped cream or cool whip for meringue.
