Sift together:
2 cups sugar
3 cups flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
Add:
1-1/2 cups cooking oil
2 tsp vanilla
3 eggs
1 cup coconut
1 cup crushed pineapple (drained)
2 cups grated carrots
1 cup chopped pecans

Cream Cheese Frosting:
1/2 stick melted butter
2 tsp vanilla
2 tbsp milk
8 oz package of cream cheese
3-1/2 cup powdered sugar

Directions:
Directions:
Combine dry and wet ingredients. Bake in loaf or layer pan 50 minutes at 350 degrees. Let cool.
Combine frosting ingredients. Assemble cake.
