1/4 cup of fresh squeezed lemon juice
1/4 cup of white cooking wine
1/2 stick of butter
2 tsp of Minced Garlic
Sprinkle of crushed red pepper
4 boneless chicken breasts
2 beaten eggs
breadcrumbs

Directions:
Directions:
Pound cutlets to a 1/4 inch thickness. Dip in egg batter and then breadcrumbs. Fry the cutlets in olive oil and keep warm after they are cooked. In a small saucepan saute' the minced garlic and red pepper. Then, add the lemon, wine and butter and bring to a boil. Pour the juice over the cutlets in a pan and serve.

Tastes great with rice pilaf and a green vegetable.
