1 15oz can sweet potatoes or 2 cups cooked fresh sweet potatoes 1 small can of crushed pineapple 1 egg 1 t grated orange peel 1/2 t salt 1/4 t ground ginger 1 c sour cream 3/4 c light brown sugar - packed
Combine mashed sweet potatoes, drained crushed pineapple, egg, orange peel, salt, & ginger. Mix sour cream with brown sugar. Fold half of sour cream mixture into potato mixture. Pour potato mixture into greased 1 1/2 qt. baking dish. Top with remaining sweetened sour cream. Bake at 400 º for 20 minutes.
