Directions:
Directions:
1. Prepare the pan: Use an oven-safe pan or bowl. Line the bottom with vanilla wafers and set aside.
2. Make the pudding: In a heavy-bottom saucepan, mix ¾ cup of the sugar, flour, salt, evaporated milk, whole milk, and egg yolks.
3. Cook over medium heat, stirring continuously until the mixture thickens.
4. Remove from the heat and stir in the vanilla extract.
5. Add the sliced bananas and break up some vanilla wafers into the pudding mixture. Stir until everything is well coated with the pudding.
6. Pour the pudding mixture into the prepared pan or bowl over the layer of vanilla wafers.

Make the Meringue

7. Beat the 4 egg whites with a mixer until they begin to form stiff peaks.
8. Gradually add the remaining ¼ cup sugar and continue beating until the meringue is stiff. Add a little vanilla if desired and beat again.
9. Spread the meringue evenly over the top of the banana pudding.
10. Place in the oven on broil and watch closely. Broil just until the meringue is lightly browned. It can burn very quickly.
11. Let cool before serving. Refrigerate leftovers.
