4-6 Medium russet potatoes
3-5 Eggs
1 Large jar of diced pimentos (drained)
⅓-½ cup celery, chopped
⅓-½ cup sweet pickles, chopped
⅓-½ cup yellow onion, chopped

SAUCE:
1 cup mayonnaise (Best Foods)
3 T. Apple cider vinegar
3 T. White sugar
Salt and pepper to taste

- Wash potatoes with skins on. Cover with water and boil until desired tenderness.

- While potatoes are cooling, hard boil eggs, peel and set aside to cool.

- Mix sauce and set aside.

NOTE: Quantities of ingredients vary with personal taste. For jail BBQ's I use a whole bag of potatoes (10-13), a dozen eggs, 2 jars of pimentos, 1 1/2 cups each of celery, onion and pickles, and the base sauce recipe x4.

- When potatoes reach desired tenderness, drain and peel while hot. Chop potatoes into desired sized chunks. Mix all ingredients together while potatoes are still hot. Add sauce and mix well.

- Cool and cover lightly with plastic wrap.

- Chill in refrigerator for several hours.

- Prior to serving, sprinkle with paprika and black olives and/or other favorite garnishes.

Ron isn't certain where he got this recipe but thinks it was from grandma Cramer, or at least a portion of it, as she made lots of potato salad......and it was very good.
