Ingredients:  
2 lbs red potatoes
1/2 C green onion, sliced
1 garlic clove, minced
2/3 C. olive oil
1/2 White wine vinegar
2 T. dijon mustard
salt n pepper to taste

Directions:
Directions:
Cube potatoes and bring to a boil. Cook till tender, drain. Combine potato and onion, toss gently. Bring oil, garlic, vinegar and mustard to a boil, stirring constantly. remove from heat, and add salt and pepper.
