2 Medium Potatoes
1/2 Cup Sugar
1 Cup Shortening
1 T. Salt
4 1/2 t. Instant Yeast
1 Cup Sugar
3 Eggs
Approximately 9 Cups Bread Flour

Directions:
Directions:
Boil potatoes. Blend with water to make 1 quart. Cool to 110 degrees. Dissolve yeast and 1/2 cup sugar in potato water. Let rise until foamy. Beat together 1 cup sugar and 1 cup shortening. Beat in eggs. Add potato mixture and let rise until double. Add 1 T. salt and enough flour to make a stiff dough. Let rise until double. Dump onto floured board and pat down to 1/2" thick. Cut into 3" circles. Dip into melted butter and fold in half pressing down to seal. Rise until double. Bake at 375 for 20 minutes.
