5 lb (3lbs) Yukon gold potatoes
2 (1) onions
8 (4) eggs
1 1/2 (3/4) C. boiling water
1/2 ( 1/4) c. oil
1/2 (1/4) c. cold water
1/3 (1/4) C. potato starch
2 tsp (1) salt

The numbers in () is for a smaller kugel using 3 lbs. of potatoes

Peel potatoes and onions put in food processor and grate until smooth. Put in bowl Add eggs oil and salt, dissolve potato starch in cold water and add to potato mixture.

Pour into pan (s) and bake at 425º for 30 min. Reduce heat to 350º and bake for an additional 50 min to 1 hour top should be browned and crispy.
