French Onion Soup Recipe

4 medium onions
2 large cloves garlic minced
8 tablespoons (1 stick) butter
4 cans beef consomme
2 cans water
3 tablespoons olive oil
1/2 cup brandy
8 slices french bread
1 1/2 cup grated Swiss Cheese

Directions:
Directions:
1) Saute onions and garlic in 6 tablespoons butter until melted but not brown. Sprinkle flour over onions and stir well.
2) Add one can consomme and one can water. Bring to a boil, stirring constantly. Add remaining consomme, water and brandy. Stir till smooth and hot.
3) Heat 2 tablespoons butter and olive oil in skillet. 4) Saute bread till brown, place one slice in bottom of each bowl and pour soup over. Top with cheese.
