4 Tbsp olive oil, divided
1 egg, beaten
1/2 lb raw shrimp, peeled and de-veined (or chopped chicken or pork)
1/2 box ( 8 oz ) Rice Noodles, any width, soaked for stir-fry
4 green onions, chopped
1/3 cup coarsely chopped peanuts
1 packet Pad Thai Sauce
1 C carrot slices
1 bell pepper

Start by soaking rice noodles in a bowl of hot tap water for about 30 minutes. Then, in wok or large skillet, heat 2 Tbsp olive oil. Saute green onions, carrots and bell pepper till crisp tender. Push to the side of the pan. Add egg. Scramble lightly, about 20 seconds. Add shrimp or meat. Stir fry until cooked through. 4 Add remaining olive oil. Add Rice Noodles. Stir fry 4-7 minutes until firm but tender. Add peanuts and Pad Thai Sauce. Stir fry about 1 minute.
