Brown on stove top the following:
1 1/2 pounds hamburger
1 onion chopped
1 garlic clove minced
1 teaspoon salt
1/2 teaspoon pepper
1 package taco seasoning

Drain grease and add:
1- 10 ounce can enchilada sauce
1- 8 ounce can tomato sauce
1- 30 ounce can chili beans
1 pound grated cheddar cheese
1- 2.2 ounce can sliced olives drained
1- 12-16 ounce can whole corn drained
1- 4 ounce can diced green chilies

Directions:

1) Mix all ingredients together well.
2) Cut 8-12 corn tortillas in quarters. Spray crockpot with pam and place 4 tortillas(16 quarters) in bottom.
3) Cover with meat mixture- repeat until all used ending with meat mixture.
4) Cook 5-7 hours on low (NO PEEKING!) and stir before serving.

This dish brings back fun memories of when I lived in Yucaipa. Nona Spillmann would make this for a cold "bunko" night-yum. Make this early in a.m. come home to a wonderful aroma.
