2½ cups raisins
½ cup sugar
¾ cup water
3 tablespoons lemon juice
2 tablespoons cornstarch

Dough:
1¾ cups flour
½ teaspoon baking soda
½ teaspoon salt
¾ cup butter, softened
1 cup brown sugar
1 egg
1 teaspoon vanilla extract (optional)
1½ cups oats

Directions:
Preheat oven to 350ºF. Grease a 13x9x2-inch baking pan.

Filling
Stir raisins and sugar together in a saucepan. In a small bowl, combine water and lemon juice, then whisk in cornstarch. Add mixture to saucepan and simmer over medium-low heat, stirring constantly, until mixture has thickened and sugar has dissolved, about 6 minutes. Let cool completely.

Dough:
Whisk flour, baking soda and salt together in a small bowl. Place butter in bowl of a mixer fitted with a paddle attachment. On medium speed mix butter until smooth. Add brown sugar and mix until pale and fluffy, 2 to 3 minutes. Add egg and vanilla, if using, and mix until combined. Reduce speed to low. Add flour mixture; mix until just combined. Stir in oats.

Spread half of dough into prepared pan. Press down on dough to flatten and compact. Spread raisin filling evenly over top of dough. Crumble remaining dough over filling using your fingers, gently pressing down so that topping covers filling.

Place pan in oven and bake, rotating pan halfway through, until top is golden brown, about 35 minutes. Cool completely on a wire rack. Cut into 2-inch squares.
