2 boxes of phyllo dough
2 1/2 cups of milk
1/2 cup of canola oil
2 large eggs
16 ounces of feta cheese
4 ounces of chopped parsley

Directions:
Directions:
Beat the eggs in a bowl, then add the milk and vegetable oil to combine.

In a rectangular sheet pan with a rim, lay 2 sheets of dough, then brush 4-5 tablespoons of the egg mixture over the sheets. Repeat this process until all the sheets from 1 box of phyllo are used.

Mix the feta cheese with the chopped parsley in another bowl and spread it over the last sheet of dough.

Using the second box of phyllo, lay 2 sheets on top of the feta cheese mix and brush with the egg mixture. Repeat until all the sheets from the second box are used.

Cut the borek with a sharp knife into squares of whatever size desired, then pour remaining egg mixture over the top.

Bake in a 350º oven for 25-35 minutes until brown. Let cool a bit then serve warm.

Instead of the feta cheese filling, borek can also be made with a spinach filling or ground beef filling.

If using spinach, saute the spinach until wilted, season with salt and pepper and sqeeze all the moisture out before using.

If using beef, saute finely chopped onions in olive oil, add beef, parsley, season with salt and pepper and brown, then drain well before using.
