Cookie:
1 c. shortening
1 1/2 c. brown sugar
2 eggs
3 c. flour
1 tsp baking powder
1/2 tsp salt
1 1/2 c. diced rhubarb
3/4 c. flaked coconut

Frosting:
3 oz cream cheese
1 Tbsp butter
1 tsp. vanilla
1/2 c. powdered sugar
Directions:
Directions:
Mix all ingredients and place by on greased tray by tsp. Bake @ 350 for 8-12 min.
Frost when completely cooled.
