2 (32 ounce) box or can chicken broth
3/4 cup finely chopped onion and carrot
1 can (4 ounce) chopped green chilies
4 cloves garlic, minced
1 - 1/2 tbsp. minced fresh or 1 - 1/2 tsp. dried basil leaves
1 package (9 ounce) frozen cheese ravioli
3 boneless, skinless chicken breast
1/4 cup freshly shredded parmesan cheese

In a large pot over high heat bring broth, onion, carrot, green chilies, garlic, and basil to a simmer. Cover, reduce heat to low and simmer about 15 minutes. Cook chicken breast and cut into bite size pieces. Bring broth to a boil. Add ravioli and cook until tender, 4 to 6 minutes. Add chicken and until hot. Ladle soup into bowls and sprinkle with parmesan cheese.

I cook the chicken with my Lean Mean grilling machine or you can buy already cooked chicken. I serve with a baguette slice into 1 inch rounds. Place the rounds on a cookie sheet and butter each round. Sprinkle with freshly grated parmesan cheese and broil until golden brown. About 3 minutes.
