Ingredients: 1 pint cider vinegar 3 1/2 C. Brown sugar, firmly packed 2 medium onions, chopped 1 lemon and rind, seeded and sliced thin 3 garlic cloves, pressed 1 1/2 C. Seedless raisins 1/4 tsp. Cayenne pepper 1 T. Mustard seed 1 1/2 tsp. Salt (optional) 4 oz. Crystallized ginger or 1 tsp. Ground ginger 6 Roma tomatoes, peeled and cut into 8ths 1 green pepper, chopped 6 whole cloves 1/4 tsp. Nutmeg 6 medium (Braeburn) apples, peeled and sliced 4 large mangos, peeled and sliced

Directions:Place the can lids and rims in a pan of boiling water and simmer. Place the glass canning jars in the dishwasher and run the cycle, timing it to the end at the same time as ingredients are ready, about one hour. Prepare the tomatoes by placing them 1 minute in a pan or dish of boiling water and then peeling off the skins. Peel and slice mangos and apples. Combine all the ingredients in a large kettle and let it cook one hour until the fruit is clear and the liquid is syrupy. Ladle the HOT fruit and syrup into the HOT jars while holding the jars with tongs. Wipe any excess syrup off the jars and cover them with the sterilized lids and rims. Place filled jars on a towel to cool. When the seal is made there should be a "pop" and an indent in the top of the lid. If there is not a good seal, place the jar in the refrigerator when cool and use it right away. |
