2 pkgs or 4 ½ tsp. dry yeast
½ cup warm water
2 T. sugar
4 cups white flour and 2 cups wheat flour, or 6 cups white flour
2 cups scalded milk
1 T. salt
½ cup melted shortening or canola oil
2 eggs, well beaten

Directions:
Directions:
Mix and let stand until foams and doubles dry yeast, warm water, & sugar. In a new large bowl sift in flour. Scald milk then add salt and melted shortening/canola oil. Beat 2 eggs in another bowl. Scoop out center of the flour then pour in milk, yeast mixture, & eggs. Eggs added last so hot liquids don’t cook. Cover and let rise 1 hr. Knead once or twice-mix well. Roll out and shape and let rise in greased thick sheet pan at least 30 min until eatable size (cover with dry cheese cloth). Bake 10 min at 425º F. Butter rolls after removal from oven for soft crust.
