Ingredients: 3/4 - 1 c. (170 g) room temp butter 1 1/4 c. (160 g) icing sugar 1 1/2 Tbsp. oil 1 1/2 Tbsp. water 1 1/8 tsp. baking powder 2 1/2 c. (320 g) all-purpose flour 1 Tbsp. cornstarch 2 Tbsp. Cocoa powder 1/2 tsp. vanilla essence 1/2 tsp. Espresso powder

Directions:Preheat oven to 340º F (170 C). Combine flour and cornstarch in small bowl. Combine butter and icing sugar with a spatula in medium bowl. Combine oil, water, and baking soda with a whisk in another small bowl! Add oil mixture to butter mixture combine with vanilla extract. Gently add flour mixture in three batches, knead gently with hands to combine completely. Divide dough 1/3 and 2/3. Whisk together cocoa and espresso and add to 1/3 of the dough, blend until evenly mixed with hands. Divide chocolate dough into 6 equal parts and vanilla dough into 7 equal parts. Roll each part into a rope approx 15” long, Layer the dough starting & ending with vanilla dough. Flatten the vanilla on top of each chocolate rope. Should be approximately a 2” square across and 15” long. Refrigerate 20 minutes. Remove from fridge and cut with sharp knife 1/4” slices. Arrange 1 1/2” apart on cookie sheet lined with silicone mats or parchment paper. Bake for 10- 12 minutes or golden on the bottom. |
