1 lb. lean pork cut into 1" cubes.
1 green pepper, cut in 1" slices
1 onion, quartered
3 slices of canned pineapple cut into pieces.
Marinade pork for 20 minutes in a combination of 1 T soy sauce, 1/2 t salt, 1 t cornstarch, 2 t sherry, 1 egg yolk.
Sweet & Sour sauce: 1/2 c canned pineapple juice, 4 T ketcup, 3 T sugar, 3 T vinegar, 1 T soy sauce, 2 T sherry
Cornstarch Mixture: 2 T cornstarch 1/2 c water.

Heat frying pan and oil to 375º. Deep fry the pork, putting each piece in separately and doing only a few at a time. Remove from the oil after 1 minute. Drain well. Reheat the oil for deep-frying and fry the pork pieces all at once again. Drain well. In wok, heat 2 T oil to saute onions and green pepper on high heat for a few minutes. Add sweet and sour sauce. Bring to a boil and stir in the cornstarch mixture to thicken. Add pork and pineapple. Stir briefly. Serve with rice.
