½ cup butter
½ cup shortening
1 cup sugar
1 egg-unbeaten
2 ½ cups sifted all-purpose flour
½ tsp baking powder
1 tsp vanilla

Directions:
Directions:
Preheat to 400 degrees. Cream butter, sugar, and shortening. Add egg, blend well.
Sift flour and baking powder. Add flour mixture and vanilla to creamed mixture - blend thoroughly. Drop a teaspoon of dough approximately 1/8 inch thick on ungreased cookie sheet. We typically use a fork to create a hatch pattern on the top of the cookie and make it all one thickness. You can dip your fork in sugar for an extra bit of sweetness on top. Bake at 400 degrees for 6-10 minutes depending on thickness of cookies. Enjoy with a cup of your favorite tea!

Grandma Gregory always had a cup of warm tea with lots of milk and sugar ready for Kevin and me when we would spend the night or come for breakfast. If we were lucky, she would also have a batch of tea cookies too. Or, if we were really lucky, we'd get to help her make a batch and have them right out of the oven. The tea cookies are meant to be small and a bit dry and crumbly...the perfect vehicle to soak up the tea to soften the cookie. They aren't overly sweet and are meant to pair with the tea. So, put on the kettle before you pull them out of the oven!
