4 green onions (about 1/2 c. sliced)
8 mushrooms (about 1/2 c. sliced)
1 clove garlic
1 T. olive oil
3 boneless,skinless chicken breasts, diced
1-10 3/4 oz. can cream of celery
2 T. milk
1/2 t. salt
1/4 t. white pepper
2 English muffins, halved

Preheat the oven to 450º.

Slice green onions and mushrooms; set aside. Mince garlic; set aside.

Heat 1 T. olive oil in large nostick skillet over medium-high heat until hot. Add chicken; cook until chicken is no longer pink in center, about 5 to 7 minutes.

Combine chicken, soup, green onions, mushrooms, milk, garlic, salt and pepper in medium bowl; mix throughly. Spray 4 (6 oz) custard cups with nonstick cooking spray; palce equal portions of chicken mixture in each cup.

TOp chicken mixture with English muffin halves, split sides down. Place custard cups on baking sheet.

Bake until mufins ar golden brown and chicken mixture is hot and bubbly, about 13 to 15 minutes. Invert custard cups onto serving dishes. Serve immediately.
