Ingredients: For the roux: 2 Tbsp flour 2 Tbsp butter
Milk
Whole milk (but use your milk of choice, skim, 2%. I have found that making this with almond milk or such, does not have the same result)
Cheese: 2-3 cups of cubed or shredded velveeta cheese (you can use any kind of cheese you like for your cheese sauce or a combination)
1 sleeve Saltine Crackers

Directions:In a medium-sized saucepan, add your roux ingredients, butter and flour. Turn on medium heat and stir to blend as the butter melts. Once it is all blended, start adding your milk of choice. Slowly while stirring.As this cooks, it will become thicker.
Start adding your cheese, one handful at a time, while stirring over low to medium heat. If the heat is too high you might burn the bottom and have to start over.
Once all the cheese is melted, pour over saltine crackers on a plate and enjoy!
PS: Some like to crush up your crackers and add cheese and others like to lay them flat and pour the cheese over each cracker.

Notes: On the Day farm in Gilmore City, when money or groceries were tight, this is what they would eat, for breakfast or dinner. They always had cheese, milk and crackers of some kind in the kitchen. And this delicious recipe provides warmth and comfort.
