1-1/3 C oil 6 ripe bananas, mashed
3 C sugar + 1/2 C 1 C sour cream
4 eggs, beaten 4 C flour
1-1/2 tsp soda 1-1/2 tsp salt
2 tsp vanilla 1 C chopped pecans, rolled in flour + ¼ C


Directions:

Roll 1 C pecans in flour and set aside.

Mix 1/2 C sugar and 1/2 C pecans. Set aside.

Mix flour, salt, and soda. Set aside. Combine oil, sugar, eggs, bananas and sour cream in large bowl. Beat until smooth. Stir in flour mixture, one fourth at a time. Add vanilla and pecans. Stir until incorporated. Pour into pans. Will fill 2 large or 4 medium loaf pans. Sprinkle with sugar and pecan mixture.

Bake at 325º: 1 hour for large pans, 45 minutes for medium pans or until they test done with a toothpick.

Cool completely before freezing.
