1 1/2 c. brown sugar
1 c. granulated sugar
1 1/2 c. shortening
3 eggs
2 1/4 c. oatmeal
3 c. flour
1 1/2 c. coconut
1 1/2 tsp. salt
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp vanilla extract

Directions:

Preheat oven to 350º

Cream together the sugars and shortening. Add slightly beaten eggs and vanilla extract. Sift flour, salt, baking powder and baking soda together. Add coconut and oatmeal to dry ingredients and mix well. (at this time you may add in chocolate chips, chopped nuts, English toffee bits, raisins, etc...) Combine all ingredients. Drop by the spoonful on a greased cookie sheet and bake 12 - 15 minutes until lightly browned.

These cookies are crisp on the outside and chewy on the inside. They are good keepers and freeze well.
