1 (14-ounce) box Manischewitz Extra Moist Chocolate Cake Mix (discard the frosting mix)

2 T, oil

2 eggs

1 t. vanilla extract

1/3 cup powdered sugar

Heat oven to 350°F. Line a large cookie sheet with parchment paper.

In a large bowl, combine cake mix, oil, eggs, and vanilla with a spoon until dough forms.

Refrigerate dough for 60 minutes, or as needed for easier handling. Using slightly wet hands, shape dough into 1-inch balls. Roll balls in powdered sugar. Place balls about 2 inches apart on prepared cookie sheet.

Bake 9 to 11 minutes or until set. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes. Store tightly covered. I've even frozen these and served right from the freezer and they are still soft and the confectionary sugar is still intake on the cookies.
