For the filling:

4 cups of fresh or canned peaches (peeled, pitted, and sliced)
1 cup granulated sugar
1/4 cup brown sugar
1 teaspoon lemon juice
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
2 tablespoons cornstarch

For the cobbler topping:

1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup milk
1/4 cup unsalted butter, melted
2 teaspoons baking powder
1/4 teaspoon salt
A pinch of ground cinnamon (optional)

Directions:
Directions:
1. Preheat your oven to 350°F (175°C).

2. In a large mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, lemon juice, vanilla extract, ground cinnamon, and cornstarch. Toss the mixture together until the peaches are well-coated. Let the mixture sit for a few minutes to allow the sugars to start drawing out the peach juices.

3. Pour the peach mixture into a 9×9-inch baking dish or a similar-sized pie dish.

4. In a separate bowl, prepare the cobbler topping by whisking together the flour, granulated sugar, milk, melted butter, baking powder, salt, and a pinch of ground cinnamon if desired. Mix until the batter is smooth.

5. Carefully spoon the cobbler topping over the peach mixture. You can use the back of a spoon to spread it evenly, but it’s okay if it’s not perfect.

6. Bake the cobbler in the preheated oven for about 45-50 minutes or until the topping is golden brown and the peach filling is bubbly.

7. Remove the cobbler from the oven and let it cool slightly before serving. It’s best enjoyed warm with a scoop of vanilla ice cream or a dollop of whipped cream.
