1 1/4 cups all-purpose flour
6 tbsp. butter, softened
1/4 tsp. almond extract

Place flour in a medium bowl. Mix in butter using fork or pastry blender. Sprinkle in almond extract and stir until dough comes together. Drizzle a little water, if needed. Form a flat ball, wrap in saran wrap and refrigerate for 1 hour. Pat dough onto the underside of an ungreased baking sheet, about 1/8" thick. Set aside to keep cool.
 

Puff Top

1/2 cup butter
1 dash of salt
1 cup boiling water
1 cup all-purpose flour
4 eggs, room temperature

Preheat oven to 400ºF.

In a saucepan, combine butter, salt, and water. Bring to a rolling boil. Remove from heat. Immediately stir in flour with a wooden spoon. Return to low heat and stir until the mixture pulls away from the sides of the pan and forms a ball. Set aside to cool for 5 - 10 minutes.

Gradually stir in the eggs ONE AT A TIME until well blended. (If you don't blend the egg in well, the pastry will have bites of cooked egg.) Spread over the crust all the way to the edges. It does not need to be smooth.

Bake in preheated oven until golden, 45 minutes (30-ish minutes if in convection oven). Allow to cool to almost room temperature before frosting.
 

Icing

2 cups confectioners' sugar
6 tbsp. butter
1 tsp. almond extract
1 dash salt
1 tbsp. milk, as needed
3/4 cup sliced almonds

With a fork, mix the confectioners' sugar, butter, almond extract, and salt in a small bowl. Add in a splash of milk and mix until smooth. Add more milk as needed to make a pourable glaze. Drizzle over the pastry and sprinkle a lot of almond slices.

Cut into diamond shapes.
