½ cup oats (quick or old-fashioned)
¼ cup all-purpose flour
½ tsp baking soda
Pinch of salt
½ cup canned white beans (kidney or navy), rinsed and mashed with a fork
1 tbsp butter, softened (or oil)
3 tbsp brown sugar
1 large egg
½ tsp vanilla extract
2 tbsp chocolate chips or dried fruit
Optional: 1–2 tbsp chopped nuts or seeds

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or spray with non-stick spray.
In a bowl, mash the beans with a fork until mostly smooth.
Stir in butter, brown sugar, egg, and vanilla until combined.
Add oats, flour, baking soda, and salt. Stir until everything is mixed.
Fold in chocolate chips, dried fruit, and nuts/seeds if using.
Drop spoonfuls of dough onto the baking sheet and flatten slightly with damp hands.
Bake 14–16 minutes, until edges are lightly golden but centers are still soft.
Cool slightly before eating.
