5 lbs potatoes
1/2 c diced, uncooked bacon
1/2 c oil
3 tbsp vinegar
1 tsp sugar
1 tsp salt
1/4 tsp pepper
3/4 c sliced green onions
1/4 c chopped chives

Directions:
Directions:
Place unpeeled potatoes in cold water and bring to a boil. Boil gently until potatoes are tender, but still firm. Do not overcook. Pour off water and allow potatoes to cool until easy to handle. Peel and slice potatoes and place in a large bowl. Slowly saute the bacon until crisp. Do not drain fat from skillet. Remove skillet from heat and add oil, vinegar, sugar, salt and pepper. Pour mixture over the potatoes. Add onions and chives, toss until evenly blended. Can be served cold or warm.
