Potato Dumplings Recipe

4 c mashed potatoes
1 egg, beaten
4 c flour

Directions:
Directions:
Mix together mashed potatoes and egg. Add flour and mix until well combined. Shape into 3" oblong egg-shaped dumpling. Freeze until ready to use.

To prepare, place in pot of boiling water. Continue to boil until dumplings rise to top of kettle. (20-30 minutes). Remove from water and serve.

To eat: Cut into bite size pieces and pour melted butter or pork chop grease (lard) over dumpling. Serve with pork chops and sauerkraut - one of my favorite meals. Leftover dumplings may be sliced and fried.
