4-5 small zucchini
3 medium carrots, shredded
1 medium onion, chopped
Butter
1 can cream of mushroom
1 c sour cream
(or chicken) soup
1 c seasoned croutons

Directions:
Directions:
Boil zucchini until tender, drain. Saute carrots and onions in melted butter. Add soup and sour cream. Add 3/4 of croutons and zucchini. Pour into greased casserole. Put remaining croutons in 1 tbsp butter. Heat until coated, then sprinkle on top. Bake 20-25 minutes, 350.
