1/4 c pumpkin puree (not pumpkin pie filling)
1 large egg
1 c almond flour
1/2 tsp baking powder
1/2 to 3/4 tsp pumpkin pie spice
1/4 cup butter (room temp)
3/8 tsp Stevia
1/2 tsp vanilla extract
3/4 cup dark chocolate chips, dark

Directions:

Preheat the oven to 350º F. In a medium mixing bowl, add the pumpkin, and butter with a hand mixer. Add the flour, Stevia, egg, baking powder, and vanilla to the bowl. Mix well. Fold in the chocolate chips.

With a tablespoon separate the dough into 14 cookies. Press the cookies with a fork. Bake for 20-25 mins. When this cookie is cooked the bottom turns golden brown. Let the cookies cook. They can be placed in an airtight container.
