2 eggs
3 tbsp. sugar
1 tsp. salt
2 tsp. cinnamon
1/2 c. water
3 c. peeled and chopped apples
3/4 c. flour
1 tsp. grated lemon peel
peanut oil
1/2 c. sugar

Directions:
Directions:
1. Beat eggs until light and foamy
2. Mix in 3 tblsp. sugar, salt and 1 tsp. cinnamon and
water until well blended
3. Stir in chopped apples, flour and grated lemon peel
and mix well.
Heat 1/8 to 1/4 in. oil in heavy skillet
4. Drop in heaping tablespoons of latke mix and flatten
with spatula
5. Fry on each side until golden
6. Add more oil if needed
7. Drain latkes well on paper towels to take off excess
oil
8. Combine 1 tsp. cinnamon and 1/2 c. sugar to make
topping which can be sprinkled over latkes to taste
