Ingredients:  
3 large potatoes
1 small onion
2 eggs beaten
2 tbsps. flour
1/2 teaspoon pepper
pinch salt
1/2 c. vegetable oil

Directions:
Directions:
1. Wash potatoes well but don't peel
2. Grate potatoes into large bowl and grate in onion
3. Add eggs, flour, salt and pepper and mix
4. Let stand for 10 minutes and drain off excess liquid
5. Heat vegetable oil for several mnutes and drop large
tablespoons of mixture into pan and flatten with a
spatula
6. When brown around the edges, turn and fry til crispy
7. Drain latkes well on paper towels to blot offf excess
oil
8. Serve with apple sauce, sour cream or yogurt
