Diced potatoes ( 5 or 6 medium)
Diced celery. About 2 stalks
Diced onion. About 1/2 medium onion
2 boiled eggs. Mashed
About 1/2 to 3/4 cup mayo
1 tablespoon yellow mustard
2 tablespoons sweet relish
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon celery salt

Directions:
Directions:
While potatoes cook to fork tender, careful not to overcook or salad will be mushy or watery.

Mix all other ingredients together in a bowl, taste to check for too much or little of any ingredients. This part takes practice.

When potatoes are done, drain well. Mix all dressing ingredients in with potatoes, stir in slowly.
Taste again for missing ingredients.

Can serve warm or cold.

When I was little, I was 100% Dax Halter about tasting new foods, especially ones that had a lot of ingredients. (My food couldn't even touch on my plate or it was game over.)

My Grandmama always made potato salad when we visited her in Springfield. She would always coax me to try something before I could declare that I didn't like it. I refused her potato salad time and time again until I finally caved and had a taste. (I couldn't have been 3 or 4 years old.)

From that point forward, I would say, "Can I have more of that stuff, Grandmama?!" She'd say, "What stuff?! You mean potato salad?" "Yeah, that stuff, Grandmama, that stuff!"

I still catch my mama calling it that stuff when we fix it ❤️
