¼ lb bacon, chopped
1 small onion, chopped (about ⅓ cup)
2 tbsp flour
1 tbsp sugar
¼ tsp salt, or to taste
dash of black pepper
3 tbsp apple cider vinegar
1 (15 oz) can sliced potatoes, drained (reserve 4 tbsp liquid)
2 tbsp chopped fresh parsley

In a large skillet, cook bacon. Remove to a paper towel and reserve the fat. Add chopped onion to the fat; cook until onions start to become translucent, about 5 minutes. Add flour slowly to the fat and onion, allowing it to absorb. Add sugar, salt and pepper to the pan. Slowly add vinegar and the reserved liquid from potatoes. Simmer until sauce begins to thicken, about 5 minutes. Add potatoes. Add most of the bacon back in, reserve some to sprinkle on top. Cook until heated through, about 5 more minutes, then sprinkle remaining bacon and parsley on top and serve.
