4 pounds russet potatoes
3 hard-cooked eggs, chopped
1 cup mayo (Dukes please!)
2 T. finely chopped onions
2 T. sweet pickle relish1 T. yellow mustard
1 t. salt
1/2 t. pepper

Directions:
Cook potatoes in boiling water until tender (about 30 minutes), drain and cool. Peel and cut into 1-inch cubes

Combine eggs and potatoes

Stir together other ingredients to make a dressing. Stir gently into the potatoe mixture.

Chill for at least an hour
