240 g coconut oil (or 1c butter)
200 g sugar
1 lg egg, room temperature
1 tsp vanilla extract
1 tsp coconut extract (optional)
345 g all purpose flour
2 Tbsp (16 g) cornstarch
¼ tsp baking powder
¾ tsp salt

Preheat oven to 350ºF
Line cookie sheet with parchment paper

In a large bowl, using a hand mixer, beat oil and sugar together, making sure everything is completely combined
Add egg and extracts and mix until completely combined

Mix dry ingredients in a small bowl
Slowly mix dry ingredients into wet ingredients in 4 parts.
Make sure flour is completely combined before adding more flour

Knead dough into 2 round circles like you would pie crust dough. If needed use a little coconut oil on your hands to get the dough to form a cohesive ball.

Lightly dust a flat surface with flour. Carefully use a rolling pin to roll out a large circle approximately ⅛-¼" thick. Use a cookie cutter of choice to create shapes. Use s spatula to help pick up the cookies without traring them. Transfer the shapes to the lined cookie sheet.

Bake for 8 to 12 minutes, or until the bottomjust starts to brown. Thinner cookies will be crisper and need to cook for less time
